Cooking underway 
I tried not to open the Weber kettle too many times while cooking, as every time you open the lid you're losing heat and the process works best if the heat can be kept stable for the full duration.  The temparature I was aiming for was between 230F (110C) and 250F (120C) for a duration of (in this case) 9 hours.
